Mutton Madras


Linking this recipe to My  First Event -Feast of Sacrifice.
Ingredients:
mutton pieces- 300 gm
onion- 2 medium sliced
chopped tomato- 2 tbsp
green chilli- 1
ginger garlic paste - 2tsp
chilli powder - 1tsp
coriander powder - 1tsp
turmeric,fennel,cumin powder,garam masala- each quarter tsp
curd - 2 tsp
oil- 2 tbsp
salt - to taste
red colour -pinch(optional)
fresh coriander leaves - 2 tbsp

Serves - 3



Steps to follow:
Cut the pieces into bite sized -cubes.Wash and drain the mutton. In a bowl with the mutton add ginger garlic paste,curd, tomato,coriander leaves,green chilli,all masala  powders and salt , mix well. Keep aside.
Heat oil in a pressure cooker,fry onions,until golden brown. Add the marinated mutton pieces and mix well.
No need to add water or if need add half cup and close the lid..In a mediun low heat  cook for 10 minutes or five whistles or until the the meat is tender.Open the pressure cooker  and keep again in low flame until gravy thickens.If you want gravy like, you can add half cup coconut milk.
Garnish with coriander leaves. Serve with rice varieties or chappathi..
This is a fairly hot mutton curry which is good served with either Briyani or Ghee rice during Eid celebrations..

Tarka Dal & Beetroot Poriyal

Tarka Dal
Ingredients:
moong dal - 25 gm
masoor (or toor  dal )- 50 gm
ginger garlic paste - 1 tsp
turmeric powder - quarter tsp
tomato - 1

 For the tarka:
oil - 1tbsp
ghee- 1 tsp
mustard - half tsp
sliced onion - 1
green chilli - 1
dried red chilli - 2
curry leaves - few
chopped coriander and mint leaves - for garnishing.

Serves-3

Steps to follow;
Soak and boil both masoor (or toor dal )and moong dal with ginger garlic paste, turmeric powder,tomato for 3 whistles in the cooker until soft.


Mash the dal mixture.If it is dry add little water and salt to taste.
To prepare tarka heat oil in a frying pan add mustard seeds, dried red chillies, green chilli,sliced onions and curry leaves and fry until golden brown.
Pour the tarka over the mashed dal and garnish with coriander  and mint leaves.(optional)
 Beetroot Poriyal:
Beetroot - 300 gm
onion - 100 gm
moong dal - a hand ful
oil - 1 tbsp
mustard & urad dal- each half tsp
coriander, curry leaves - few

to grind coarsely:
dried red chilli - 2
grated coconut - 3 tbsp
cumin seeds - half tsp

Steps to follow:
Remove skin and slice nicely the beetroot and onion.Soak and half cook the moong dal.
Heat oil in a pan add mustard& urad dal,curry leaves  when it splutter, add sliced onion and stir well.Then add sliced beetroot and stir again.Add moong dal, mix well let it cook for five - seven minutes.Add salat to taste.

Then add coarsely ground coconut and stir well. Low the flame and mix well, Switch off the flame after    2 minutes. Garnish with chopped coriander leaves.
Now the healthy tasty beetroot poriyal is ready to serve.
Serve Tarka Dal and Beetroot poriyal with rice and chappathi.

Idli Dip in Moong Dal Shallots Sambar



Ingredients :
moong dal - 75 gm
shallots - 100 gm
chopped tomato big - 1
slitted green chilli - 1
turmeric powder, asafoetida - each quarter tsp
sambar powder - 1tsp
salt - to taste
sugar - half tsp
oil - 2 tsp
ghee - 1tsp
mustard - half tsp
coriander,curry leaves - few

Serves - 3



Steps to follow:
In a pressure pan add soaked moong dal ,turmeric powder, shallots,sliced tomatoes,green chilli,sambar powder,chopped coriander leaves and add 3 cups water  and leave it to 2 whistles.Open and add salt to taste and sugar.Add 1 cup water  and chopped coriander.and let it boil.
Heat oil ghee mix in a kadai add mustard seeds,when it splutter add curry leaves and add chopped few shallots, asafoetida and golden fry and pour it to the sambar.
Moongdal shallots sambar is ready to serve.
Serve  Idlis Dip in Moong dal shallots sambar.


Idli :
Ingredients:
boiled rice - 3 cup
urad dal - 1 cup
salt - to taste
Soak rice and dal separately for 6 hours.Grind dal  nicely and rice separately.
After grinding mix dal and rice pastes together by hand. Add salt to taste.Keep aside overnight for fermentation.Mix the idli batter and Steam the idlis in greased idli stands.Serve hot with Sambar.

You can use ready made idli batter available in Asian Department stores.

Broccoli Egg Stir Fry

Ingredients:
broccoli  florets- 2 cups
egg -2
chopped ginger - 1 tsp
chopped garlic - 1 tsp
chopped onion - 2 tbsp
soya sauce - 1 tsp
pepper powder -  half tsp
oil - 1 tbsp
salt - to taste.







Steps to Follow:
Chop onion,ginger and garlic.Keep aside.
Heat oil in a pan add chopped onion,garlic,ginger and stir fry it.
Then add broccoli florets and stir again for 1 minute.
Add soya sauce, pepper powder, little salt and mix well.
Add beaten egg, sim the flame till egg cooks and stir it.Garnish with chopped coriander leaves and serve hot  with plain rice or use this stir fry for chappathi,parota rolls or to make bread sandwiches.

Tawa Naan / Butter Mutter Paneer


Ingredients:
paneer cubes -- 100gm
peas - 50 gm
onion - 1
tomato-1
cashew nuts - 4
ginger garlic paste - 1tsp
chilli powder - half tsp
turmeric,karam masala powder - each quarter tsp
dried kasooi methi - 2tsp
butter - 2tsp
salt - to taste

Steps to follow:
1.Cook green peas and  keep it separately and put the paneer cubes in chill water and keep aside.Boil cut onions,tomato and cashew with little water,let it cool and paste it.
2. Heat butter in a kadai, add gg paste,stir well then add boiled onion,tomato cashew paste mix and stir well.
3. Add chilli,turmeric,karam masala to it. Mix and let it boil for few minutes.Then add cooked green peas and stir well after two minutes add paneer cubes.Then add salt and kasoori methi . Mix well.,simmer the stove let it stand for two minutes. Switch off the stove.
4.Now yummy mutter paneer is ready to serve.

Serves - 3

Tawa Naan
Ingredients:
plain flour - 2cups
yeast - 1tsp
sugar- 1tsp
baking powder-quarter tsp
salt - half tsp
warm milk -30 ml
curd ,milk - each quarter cup
oil - 1 table spoon
Butter - 2 tsp (to brush)

Steps to follow:
1.Mix the yeast ,warm milk ,sugar and leave to become frothy.
2.Sift the flour,baking powder and salt.Make a well, add yeast mix,milk, curd and oil.
3.Knead the dough well and cover the bowl and keep in a warm place until dough doubles in size.
4.Make each naan slipper shaped.
5.Placed the naan on lightly greased tawa and cook both sides.Brush little oil or butter.
Using the recipe to make about 5-6 Naans.

Squid Roast


Ingredients;
Squid - half kg
turmeric powder - half tsp
chopped onion - 100 gm
chopped tomato - 50 gm
green chilli - 1
ginger garlic paste - 1tsp
Chilli powder  - half tsp
pepper powder - 1 tsp
cumin powder - half tsp
fennel powder - half tsp
coriander powder - 1 tsp
coriander,curry leaves - few.
oil - 2 tbsp
salt - to taste
Clean ,wash thoroughly and mix with turmeric powder and again rinse and drain it.

In a pressure cooker heat oil, add chopped onion,stir well add gg paste, stir again then add chopped tomato,coriander and chilli. Add little salt,mix well, then add all masala powder.
Then add squid pieces.
Mix and close the cooker and leave it to 2 whistles.
Then transfer the cooked squid masala to the pan, add curry leaves and roast it nicely.
Now Squid Roast is ready to serve. Serve hot with  plain rice..

Healthy Cup Corn

Ingredients:
frozen corn niblets - 2 cups
dried oregano and paprika powder - each quarter tsp or as per taste
butter - 1tsp
lime juice - 1-2 tsp
salt - to taste

Serves - 2

Steps to follow:
In a microwave bowl add corn niblets and  keep in oven, cook for 1 - 2 minutes.
Season with salt,butter, oregano and paprika powder and finally add  lime juice and mix well.
Serve immediately in cups.
Enjoy the healthy cup corn.

Mushroom Kurma / Soft Chappathi

Sending this Soft chappathi and mushroom kurma combo to Nithu's Healthy food for Healthy Kids @ Nivedhanam.


Ingredients:
button mushroom - 200gm
chopped onion -2
chopped tomato-1
ginger garlic paste - 1tsp
garam masala - quarter tsp
chilli powder- half tsp
turmeric powder - quarter tsp
cumin powder - half tsp
fennel powder - half tsp
coriander powder - 1tsp
green chilli - 2
chopped coriander ,mint leaves - each 1 tbsp
oil - 2-3 tbsp
salt - to taste
To paste:
grated coconut- 2 tbsp
cashew nuts - 4
Steps to Follow:
Heat oil in a pan , add chopped onion, stir for a minute, add gg paste garam masala and stir again.
Then add chopped coriander, mint leaves and slitted green chilli.then add mushroom pieces and stir for a minute.
Add all the masalas and mix well, then add one cup of water and let it cook for few minutes.Add salt to taste.
Then add coconut paste and mix well.Let it boil until raw smell goes in a medium low flame.Switch off the stove.
Delicious mushroom kurma is ready to serve.

Soft Chappathi:
whole meal  flour - 250 gm
warm water - to mix
oil - little
salt - to taste.


Sift the flour and salt into a bowl, make well in the centre and slowly add small quantities of warm water,2 tsp oil and you make a smooth dough. Divide the dough into 6-8 equal portions.Knead each portion into a ball.Roll out the dough until you have a circle.
Heat the pan, when hot, cook both side of the chappathis, brush both sides slightly with vegetable oil.

Serve soft chappathis with mushroom kurma..

Chocolate Pudding

Ingredients:
full cream milk - half litre
sugar - 5- 6 tbsp
choco pudding mix - 2-3 tbsp ( according to your taste)

serves 3-4

Steps to follow:
In a vessel add milk, sugar and choco pudding mix.Mix altogether.
Then boil it in a slow medium fire, stir in between.. Switch off the stove.
Pour it separately in bowls, When it cools down refrigerate and serve.
Simply Delicious chocolate pudding is ready to serve.
