Ingredients:
cooked basumati rice - 2 cups
paneer cubes - 100gms
veg mix - 1 cup
( carrot,cabbage, capsicum)
veg soup cube - 1
oil - 2- 3 tbsp
light soya sauce - 1+1/2 - 2 tsp
salt & pepper - to taste
To marinate paneer :
paneer cubes ( dip in cold water and cut into small cubes)
kashmiri chilli powder - quarter tsp
soya sauce - half tsp
corn flour - 2 tsp
salt - to taste.
Mix and marinate for 10 minutes.
to garnish - 2 tbsp - chopped spring onions.
Serves - 2-3
Duration - If everything is ready 30 minutes..
Steps to follow:
Soak and cook the rice with enough water and salt,drain it and keep aside.
Cut the vegetables and keep aside.
Heat 1 tbsp oil and slightly fry the marinated paneer and keep aside.
Heat oil in a non stick vessel add all veggies and stir fry for a minute. Then add crushed soup cube .Stir well.Then add soya sauce .Salt is in the soup cube. no need to add salt.
Then add fried paneer cubes.Mix well.
Then add the cooked rice. Gently mix the rice.Garnish with spring onion and sprinkle little freshly ground pepper to taste and serve hot.
