Now coming to this month Northern team's challenge - Traditional and Seasonal Bengali Delicacy Green Peas Kachori with North Indian Style Spicy Dum Aloo ( Baby potatoes).
Ingredients for Green Peas Kachori :
For Kachoris:
all purpose floor - 3 cups
salt - half tsp
oil- 4 tbsp + oil for frying
Combine all purpose floor, 4 tbsp oil and salt in a large bowl. Knead it nicely adding water little by little to it to make a smooth dough. Keep aside.
For Green Peas Filling:
I made the filling less quantity.
Ingredients:
green peas- 1 cup
green chilli - 1
asafoetida - a pinch
grated ginger - half tsp
sugar - half tsp
roasted cumin powder - 1/4 tsp
ghee - 1tsp
salt - to taste.
How to make filling with green peas:
Grind peas and a green chilli along with little water to a coarse paste.
Heat ghee in a pan add asafoetida and grated ginger.
Then add the paste, salt, cumin powder and sugar.
Keep on stirring until it becomes cooked and completely dry.
Divide the dough into small equal portions and also divide the green peas filling .I divide it into seven equal portions.
Now grease a rolling board with few drops of oil or dust with flour , Roll each portion into a small circle.
Place the portion of green peas filling in the middle of the circle and bring all the edges together and seal it.
Stuff the other balls also like this.
Flatten gently the all stuffed balls into round shape (Kachori shape)
Flatten all the Stuffed balls and keep aside.
Heat enough oil and fry until the both sides are golden brown.
Drain oil and keep aside.Continue the process for remaining kachoris.
Yummy Green Peas Kachoris are ready.
